This is Cousin Faith’s Famous Coke Cake recipe that I keep thinking I’ve saved somewhere (and I have; it’s in the notes of my phone, from 2007) and I need to be sure that the “somewhere” is a little easier to find next time.

Coke Cake
2 cups flour
2 cups sugar
1 teaspoon cinnamon
2 sticks margarine, softened
4 tablespoons cocoa
1 cup Coca-Cola
1 cup buttermilk
2 eggs, beaten
1 teaspoon baking soda
1 teaspoon vanilla
Preheat oven to 400ยบF
Sift flour, sugar, cinnamon
Melt margarine in saucepan, add cocoa and Coke, bring to rapid boil
Pour over flour mix and stir
Add buttermilk, eggs, baking soda, vanilla
Mix well
Pour into 9″x13″ pan, bake 20 minutes
FROSTING
1/2 cup softened butter
3 tablespoons cocoa
1/3 cup Coca-Cola
4 cups powdered sugar
Beat with mixer until smooth
PRO TIP: If this cake is too sweet, cut it with some vanilla icecream. ๐
Faith famously made (maybe still makes? Haven’t checked recently) these as mini-bundt cakes and lived out one of the best lines in any bio ever: “Hobbies include baking things and then giving them away before eating them.”
